El membrillo es una fruta cercana que madura y cae del \u00e1rbol en esta \u00e9poca (noviembre). Esta receta es de la \u201cAmatxi\u201d, la yaya de nuestra amiga Tatiana, familia a la que estamos eternamente agradecidas.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Para hacer dulce de membrillo necesitas ganas y un poco de tiempo. En unas 4 horas, sin prisa, lo tendr\u00e1s listo para conservar en la nevera o el congelador para disfrutar de \u00e9l durante todo el a\u00f1o. Como lleva un rato, nosotras lo hemos hecho en pareja, para conversar mientras estamos en la faena y con una buena selecci\u00f3n musical.\u00a0<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">INGREDIENTES<\/span><\/p>\n<p>&nbsp;<\/p>\n<p><span style=\"font-weight: 400;\">Membrillos reci\u00e9n cogidos del \u00e1rbol (o del suelo). En nuestro caso, unos 6 kg.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Manzanas reinetas que tambi\u00e9n son de temporada. 2 kg. Por cada tres kilos de membrillo, uno de manzana.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Limones para extraer su zumo. Nosotras hemos usado 8, pero no necesitas tantos y es un poco al gusto.\u00a0<\/span><\/p>\n<p><span style=\"font-weight: 400;\">Az\u00facar panela. La receta dice que tantos kilos como de membrillos, pero nosotras echamos menos de la mitad, que la fruta ya tiene un mont\u00f3n de az\u00facares. De esta forma, el dulce no solidifica tanto, pero es m\u00e1s saludable. Los troceamos con la piel y todo (como si fuera una patata para tortilla) y hervimos en agua. Los corazones tambi\u00e9n los hemos hervido en una malla (de las de cocer legumbres)\u00a0 porque las pepitas nos vienen muy bien para espesar (tienen una sustancia que facilita el proceso). Nosotras hemos usado dos ollas (una de ellas expr\u00e9s) y en 5 minutos ya estaban Las manzanas las cortamos tambi\u00e9n, retiramos sus corazones, y hervimos (da igual junto al membrillo o separadas). En casa, como tenemos gallinas, con los corazones de las frutas se han dado un fest\u00edn. Ya veis que no hay misterio: ahora toca a fuego lento, remover y remover para que espese y no se pegue. Nosotras hemos estado unos 90 minutos d\u00e1ndole al brazo. Los tarros de cristal si los vas a guardar tiempo te interesa que est\u00e9n hervidos previamente y luego cerrados al ba\u00f1o mar\u00eda para evitar intoxicaciones.
